- 1 tablespoon grated parmesan cheese
- ½ teaspoon baking powder
- 1 tablespoon vegetable oil for frying
Instructions
- Grate the zucchini using a box grater, discarding large seeds if necessary.
- Sprinkle shredded zucchini with salt and let rest in a colander for 5-10 minutes to draw out moisture.
- Squeeze excess liquid from the zucchini using cheesecloth or a clean towel.
- Mix the zucchini in a bowl with egg, cheese, breadcrumbs, green onion, flour, and baking powder until well combined.
- Shape the mixture into four patties, about 3 inches across.
- Heat oil in a large skillet over medium heat, then add the zucchini patties.
- Cook each patty for 3 to 5 minutes on each side until golden brown.
Notes
You can use different types of cheese for varied flavor.
Make sure to remove as much moisture from the zucchini as possible for crispy fritters.
These fritters are best served immediately after cooking.
