- 1 medium lime, juiced (about 2 tablespoons)

- ½ seedless watermelon, peeled, cut into 1-inch cubes (about 6 cups)
- 2 cups cucumber, sliced in half lengthwise, then cut into half-moon shapes
- ¼ cup chopped mint leaves (about 15 leaves)
- ¼ cup chopped basil leaves (about 15 leaves)
- ½ cup (100 g) feta cheese, crumbled
Instructions
- In a small bowl, whisk together honey, lime juice, olive oil, and kosher salt until smooth and well combined. Set aside.
- In a large bowl, combine the watermelon cubes, cucumber slices, mint leaves, basil leaves, and crumbled feta cheese.
- Pour the honey-lime dressing over the salad and gently toss to combine all the ingredients evenly.
- Serve immediately for the best flavor and texture.
Notes
For added flavor, chill the salad in the refrigerator for 30 minutes before serving.
Using mini cucumbers gives a sweeter crunch, but any cucumber variety works well.
Feel free to add other fruits like berries for a twist on this classic salad.
