  • Total Time: 45 minutes
  • Yield: 3 servings 1x

Ingredients

Scale
  • 8 oz shiitake mushrooms, stems removed and thinly sliced
  • 1 tbsp sesame seeds
  • 2 tbsp avocado oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Juice of half a lemon
  • 1 cup cherry tomatoes, halved
  • 3 scallions, thinly sliced, whites and green portions separated
  • 1 ear of corn, kernels cut away from the cob
  • 4 cups hot water
  • 2 dry shiitake mushrooms
  • 2–3 tbsp yellow miso paste
  • 11 oz soft tofu, sliced into rounds or cubed
  • Sesame oil, for serving (optional)
  • Cooked rice, for serving (optional)

Instructions

  1. Preheat the oven to 425°F. In a mixing bowl, combine the mushrooms, sesame seeds, garlic powder, onion powder, 1 tablespoon of oil, and salt. Toss to coat and spread on a baking sheet. Bake for 15 minutes, toss, then bake for an additional 5-10 minutes until browned. Squeeze lemon juice on top before serving.
  2. In a large saucepan, heat the remaining tablespoon of oil over medium-low. Add the halved tomatoes and a generous pinch of salt, sautéing for about 5 minutes until softened.
  3. Add the scallions and corn to the tomato mixture, cooking for an additional 2-3 minutes.
  4. Pour in 3 1/2 cups of water and add the dried mushrooms. Bring to a boil, then reduce to a low simmer for 10 minutes. Gently add the tofu and cook for 3-5 minutes to warm through.
  5. In a small bowl, whisk together the remaining 1/2 cup of water with the miso paste until smooth. Remove the dried mushrooms from the soup, then stir in the miso mixture.
  6. Adjust seasoning with salt or miso to taste, drizzle sesame oil over the top, and serve in bowls topped with roasted mushrooms and a squeeze of lemon. Enjoy with rice if desired.

Notes

Feel free to adjust the amount of miso based on your taste preference for saltiness.
For a heartier soup, consider adding more vegetables or proteins like chicken or shrimp.
This soup can be made ahead and reheated, just add fresh toppings before serving.
