  • 1 cup (227 g) salted butter
  • 1½ cups (300 g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • ½ teaspoon (0.5 teaspoon) almond extract
  • 2¾ cups (380 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon (0.5 teaspoon) salt
  • 4 ounces (113.4 g) cream cheese
  • 2 tablespoons salted butter
  • 1 teaspoon vanilla
  • pinch of salt
  • 1¾ cup (210 g) powdered sugar
  • fresh fruit for topping

Instructions

  1. Preheat oven to 375°F and line 2 baking sheets with parchment paper.
  2. In a stand mixer, combine the butter and sugar. Beat on medium-high speed for about 3 minutes until light and fluffy.
  3. Add the egg, egg yolk, vanilla, and almond extract. Mix on low speed until smooth for about 30 seconds.
  4. Gradually mix in the baking soda, salt, and all-purpose flour until combined.
  5. Scoop the dough using a ¼ cup measure and place 6-7 balls on each lined baking sheet.
  6. Bake cookies for 11-14 minutes until lightly golden around the edges, being careful not to overbake.
  7. In a bowl, beat together cream cheese and 2 tablespoons of butter until smooth. Mix in vanilla, a pinch of salt, and powdered sugar until creamy.
  8. Top each cookie with a layer of frosting and diced fresh fruit.

Use vanilla paste for an enhanced flavor in the cookie dough.
