Ingredients

- 2 ears of corn, husk removed
- 1/2 pound asparagus
- 1 cup snap peas
- 1 cup orzo or your favorite high-protein pasta
- 3 tbsp extra virgin olive oil
- 1 bunch of chives, thinly sliced
- 2 cups arugula
- 1/4 cup pepitas
- red pepper flakes, optional
- 1 tsp kosher salt
- 4 garlic cloves
- 1 shallot, roughly chopped
- 1 tbsp pepitas
- 1 tsp dijon mustard
- 1 tbsp white balsamic vinegar
- 2 tsp agave syrup (optional)
- zest and juice of 1 lemon
- 1 cup fresh basil leaves, lightly packed
Instructions
- Clean and trim the vegetables. Cut the corn kernels from the cob, trim the woody ends of the asparagus and slice into 1/4 inch pieces. Trim and slice the snap peas at a bias.
- Bring a medium pot of water to a boil, generously salt it, and cook the orzo until al dente. Drain and transfer to a large mixing bowl.
- In a medium sauté pan, heat 1 tbsp of oil over medium-low heat. Cook the corn for 3-4 minutes undisturbed. Toss with salt and cook for an additional 2 minutes until lightly charred. Transfer the corn to the bowl with the orzo.
- In the same pan, sauté the asparagus with a pinch of salt for 3-4 minutes. Transfer to the orzo bowl. Add snap peas, chives, pepitas, and arugula to the mix.
- Add 3 tbsp of oil back to the pan. Sauté garlic and shallot with a pinch of salt until golden, about 3-4 minutes. Toast the pumpkin seeds for 2-3 minutes in the same pan. Transfer to a blender after cooling for 5 minutes.
- In the blender, add the oil, mustard, vinegar, agave syrup, lemon zest, juice, and salt. Blend until smooth. Add basil and blend again, adjusting with water if too thick.
- Pour the dressing over the salad and mix until well coated. Adjust seasoning if needed, serve immediately or chill until ready.
Notes
Feel free to use any high-protein pasta variation for this salad.
Red pepper flakes can add a nice kick, adjust to your preferred level of spice!
