- 1 1/2 pounds pork tenderloin
- 3 strips bacon cooked crispy
- 4 ounces goat cheese sliced or crumbled
- 1 tablespoon honey
- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 6 tablespoons butter
- 1/2 cup apricot preserves
- 1/2 teaspoon dried sage
- 1/2 teaspoon salt
Instructions
- Cook bacon strips in the microwave for about 1 minute per slice until crispy or use your preferred method.
- Drain the bacon and allow it to cool.
- Butterfly the pork tenderloin by slicing lengthwise down one side without cutting all the way through.
- Open the pork to lay it flat and make a partial cut in the remaining third to create a pocket.
- Place the cooked bacon strips, goat cheese, and honey down the center of the pork, then roll it tightly to keep the filling inside.
- Secure the roll with cooking twine or toothpicks.
- Position the tenderloin in the slow cooker, then sprinkle with thyme, salt, and pepper.
- Cook on low for 6-8 hours until the pork is fully cooked.
Notes
For extra flavor, consider marinating the pork tenderloin overnight.
Feel free to substitute the goat cheese with your favorite cheese if desired.
Serve with a side of vegetables or mashed potatoes for a complete meal.
