Ingredients

  • 1 1/2 lbs ground beef
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. garlic powder
  • 2 eggs
  • 1 cup diced onions
  • 1/3 cup barbecue sauce
  • 1/4 cup milk
  • 1 cup crushed crackers
  • 1 cup minute brand rice
  • 2 cups ketchup
  • 1/2 cup sweet baby rays barbecue sauce
  • 1/2 cup brown sugar
  • 1 tbsp. apple cider vinegar

Instructions

  1. In a large bowl, combine the meatball ingredients, excluding the rice. Mix well using clean hands, then add the rice and mix again until evenly distributed.
  2. Form the mixture into meatballs approximately the size of 2 tablespoons, yielding about 20 meatballs.
  3. In a small bowl, mix together the sauce ingredients until well combined.
  4. Spray the slow cooker with non-stick spray, layer some meatballs, and drizzle sauce over them. Repeat this process until all meatballs and sauce are used up.
  5. Cover the slow cooker and cook on LOW for 4-5 hours without lifting the lid.

Notes

You can adjust the sweetness of the sauce by adding more or less brown sugar based on your taste.
Serve these meatballs with rice or pasta for a complete meal.
Feel free to customize the seasoning in the meat mixture to suit your preference.
