- 3 cups cut broccoli
- 9 eggs
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. onion powder
- 8 oz. pkg. cream cheese
- 2 cups shredded colby jack cheese, divided
Instructions
- Bring a large pot of water to a boil.
- Add broccoli to boiling water and cook for 3 minutes, then drain and rinse with cold water. Set aside.
- In a large bowl, combine eggs, salt, pepper, onion powder, and cream cheese. Beat with a hand mixer on medium speed until well mixed; a few chunks of cream cheese are fine.
- Spray the slow cooker with non-stick spray. Layer the broccoli evenly in the slow cooker and sprinkle with 1/2 cup of cheese.
- Pour the egg mixture over the broccoli and cheese.
- Cover and cook on HIGH for 2 hours and 15 minutes without lifting the lid.
- Once done, top with the remaining cheese and cover again for about 10 minutes to allow the cheese to melt.
- Serve and enjoy!
Notes
Blanching the broccoli ensures it stays vibrant and tender.
Feel free to substitute other cheeses based on your preference!
For extra flavor, add cooked bacon or ham to the mixture.
