  • 3 pounds apples honeycrisp, gala, fuji, or a mix, peeled and sliced
  • ¼ cup apple juice
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • pinch of salt
  • ½ teaspoon vanilla extract
  • 1 tablespoon tapioca flour or cornstarch mixed with 1 tablespoon water

Instructions

  1. Place the sliced apples into the slow cooker.
  2. Add the apple juice and sprinkle the maple syrup, ground cinnamon, ground nutmeg, and salt over the apples. Stir gently to coat the apples.
  3. Cover the slow cooker and cook on low for 3-4 hours or on high for 1½-2 hours until apples are tender yet maintain their shape.
  4. If possible, stir the apples halfway through the cooking time.
  5. After cooking, add the vanilla and tapioca slurry, stirring well and heat for an additional 5-10 minutes.
