Ingredients
- 2 pounds boneless skinless chicken thighs
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 yellow onion diced (about 1/4 cup)
- 3 cloves garlic minced
- 1 teaspoon italian seasoning
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 cups chicken broth
- 1 teaspoon grainy mustard
- 3/4 cup heavy cream
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Sprinkle each side of the chicken thighs with Italian seasoning, salt, and pepper.
- In a large skillet over medium-high heat, melt the butter with olive oil.
- Add the diced onion and garlic, sautéing for about 2 minutes.
- Move the onions and garlic to the side of the pan and add the seasoned chicken thighs.
- Sauté the chicken for about 2-3 minutes on each side until nicely browned.
- Transfer the contents of the pan to a slow cooker.
- Pour in the chicken broth.
- Cover and cook on low for 5-7 hours or high for 3-4 hours.
- Remove the chicken thighs and cover them to keep warm.
- Add the cream, mustard, and lemon juice to the slow cooker, whisking until combined.
- To thicken the sauce, pour it into a small saucepan and whisk in 1 tablespoon of cornstarch.
- Bring the sauce to a boil for 2-3 minutes until thickened to desired consistency.
- Adjust salt and pepper to taste.
- Pour sauce over the chicken and serve.
Notes
For added flavor, consider marinating the chicken thighs in the seasoning for a few hours before cooking.
You can add vegetables like carrots or celery to the slow cooker for extra nutrition and flavor.
Serve with rice or pasta to soak up the creamy sauce.
