  • Total Time: 0 hours
  • Yield: 24 servings 1x

Ingredients

Scale
  • 1 cup butter, melted and slightly cooled
  • 1 cup granulated white sugar
  • 1 cup packed dark brown sugar
  • 4 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup Dutch-processed cocoa
  • 1 teaspoon espresso powder, optional
  • 1 teaspoon kosher salt
  • 1 1/4 cups chopped chocolate, divided
  • 3/4 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 1/4 cups powdered sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon heavy cream, or whole milk
  • 3 cups puppy chow

Instructions

  1. Preheat the oven to 350°F and prepare a 9×13-inch baking pan with parchment paper and grease it.
  2. In a large bowl, mix the melted butter with the granulated and brown sugars until smooth. Incorporate the eggs and vanilla extract until well blended. Then mix in the flour, cocoa powder, espresso powder (if using), and salt. Fold in 1 cup of chopped chocolate.
  3. Spread the brownie batter in the prepared pan, then sprinkle the remaining 1/4 cup of chopped chocolate on top. Bake for 25 to 35 minutes until a toothpick comes out with a few moist crumbs. Allow the brownies to cool completely in the pan.
  4. In a stand mixer, beat the peanut butter and softened butter until smooth. Gradually add powdered sugar, salt, vanilla extract, and heavy cream, mixing until fluffy.
  5. Once the brownies are cooled, frost them with the peanut butter mixture evenly on top.
  6. Sprinkle puppy chow over the frosting, pressing gently to adhere. Cut into squares and serve.

Notes

Make sure to let the brownies cool completely before frosting for the best results.
Store any leftovers in an airtight container at room temperature for several days. This treat is excellent for parties and events.
Feel free to customize the toppings or add more chocolate chips as per your preference.
