Enjoy this easy dessert that brings comfort and a touch of fall flavors to your table!

  • Total Time: 15 minutes
  • Yield: 20 truffles 1x

Ingredients

Scale
  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/3 cup pumpkin puree
  • 1 ¾ cups finely ground graham cracker crumbs
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 12 ounces white chocolate chips
  • optional: extra graham cracker crumbs or english toffee bits

Instructions

  1. In a mixing bowl, combine softened cream cheese and powdered sugar. Beat until smooth.
  2. Add pumpkin puree and cinnamon; mix until smooth.
  3. Incorporate graham cracker crumbs, pumpkin pie spice, and cinnamon. Mix until dough is thick and fully combined (about 1-2 minutes).
  4. Transfer dough to a bowl, cover, and refrigerate for 2 hours or longer.
  5. Line a baking sheet with parchment paper.
  6. Scoop a tablespoon of dough into hands and roll into a ball (about 1" in diameter). Place on baking sheet and repeat, spacing truffles 2" apart (yield approximately 20 truffles).
  7. Chill truffles for 20-25 minutes before dipping in chocolate.
  8. For the chocolate, place white chocolate chips in a microwave-safe bowl.
  9. Microwave on high in 10-15 second intervals, stirring in between until melted and smooth. Do not overheat!
  10. Remove truffles from refrigerator. Using a fork, dip each truffle into melted chocolate and cover completely.
  11. Scrape excess chocolate off the fork and place truffle back on the baking sheet.
  12. Repeat with remaining truffles; re-dip as needed for coverage.
  13. Sprinkle English toffee bits or graham cracker crumbs on top before setting.
  14. Refrigerate until set completely before serving. Truffles can be kept at room temperature for a few hours.

Notes

Allow the truffles to chill adequately for easier handling when dipping in chocolate.
Feel free to experiment with various toppings for different flavor combinations.
Store truffles in an airtight container in the refrigerator for up to a week.
