Ingredients

  • 1 1/2 lbs. pork chops, 4-6 chops
  • 2 Tbsp. olive oil
  • 28 oz can crushed tomatoes
  • 15 oz. can diced tomatoes
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/2 tsp. garlic powder, or 4 cloves minced
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried oregano
  • 1 1/2 tsp. Italian seasoning blend
  • 1/2 Tbsp. red pepper flakes, to taste
  • 1/2 tsp. sugar
  • 1 small yellow onion, diced
  • 8 oz sliced mushrooms
  • 3 bell peppers, sliced

Instructions

  1. Heat olive oil in a skillet over medium high heat.
  2. Season pork chops with salt, pepper, and garlic powder on each side.
  3. Sear each side of the pork chops for about 2 minutes until browned.
  4. In a slow cooker, combine crushed and diced tomatoes.
  5. Stir in the salt, pepper, garlic powder, thyme, oregano, Italian seasoning, red pepper flakes, and sugar.
  6. Add the diced onion, sliced mushrooms, and bell peppers into the slow cooker.
  7. Nestle the seared pork chops into the sauce and vegetables.
  8. Cover the slow cooker and cook on LOW for 6-7 hours.
  9. Serve with your choice of side and enjoy.
