Ingredients
- 2 lbs. beef stew meat
- ½ tsp. dried leaf oregano
- ½ tsp. dried leaf thyme
- ¼ tsp. black pepper
- 2 oz. beef gravy mix
- 1 Tbsp. Dijon mustard
- 2 Tbsp. tomato paste
- 1 ¼ cups water
- 1 shallot, diced
- 2 garlic cloves
- 2 cups sliced mushrooms
- ½ cup sour cream
Instructions
- Place the beef stew meat in the slow cooker.
- Sprinkle the gravy mix, oregano, thyme, and black pepper over the beef.
- Add the tomato paste, Dijon mustard, and minced garlic into the mix.
- Incorporate the diced shallots and sliced mushrooms, then pour the water over all ingredients. Stir well to combine even the tomato paste and mustard into the gravy.
- Cover the slow cooker and set it to cook on LOW for 5-6 hours until the meat is tender.
- Once the cooking is done, fold in the sour cream and serve.
Notes
For added depth of flavor, use fresh herbs instead of dried if available.
Feel free to adjust mushroom quantity according to your taste.
Serve over rice or mashed potatoes for a hearty meal.
