These Plum Bars are a scrumptious treat made with fresh plums and a buttery crust. Perfect for dessert lovers, they offer irresistible flavor and simple prep for a delightful homemade dessert.

Ingredients

  • 1 ¾ cup all purpose flour
  • ⅔ cup sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup butter, cold
  • 1 egg, whisked
  • 2 tbsp milk
  • 4 plums, diced small
  • ¼ cup sugar
  • 2 tbsp all purpose flour
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 400° F and line an 8×8 baking dish with parchment paper.
  2. In a large bowl, mix together flour, sugar, baking powder, and salt. Grate the cold butter into the bowl using a cheese grater.
  3. Combine the mixture with your hands until it resembles small pebbles. Add the whisked egg and milk, stirring to combine.
  4. In a separate bowl, combine the diced plums, ¼ cup sugar, 2 tbsp flour, and vanilla extract, stirring to mix well.
  5. Press ⅔ of the crust mixture into the bottom of the prepared baking pan.
  6. Spread the plum mixture evenly over the crust in the pan. Sprinkle the remaining crust mixture on top.
  7. Bake in the oven for 30-32 minutes until the edges are golden brown. Let the bars cool at room temperature before slicing.

Notes

Make sure the butter is very cold to achieve a flaky texture
You can substitute other fruits like peaches or cherries for a different flavor
Serve with whipped cream or ice cream for an extra indulgence.
