- 5 cups peaches, about 5–6 medium peaches, peeled and diced

- 2 tablespoons granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ¾ cup old-fashioned oats
- ¾ cup all-purpose flour
- ½ cup packed light brown sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon sea salt
- 6 tablespoons unsalted butter, melted
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (180°C). Line a 9-inch square baking pan with parchment paper, allowing overhang on two sides.
- In a large bowl, combine the melted butter, granulated sugar, and vanilla extract until well mixed.
- Stir in the all-purpose flour and salt, mixing until a soft dough forms.
- Press the dough evenly into the bottom of the prepared baking pan.
- Bake for 15 minutes, until the edges are lightly golden.
Notes
You can leave the peach skins on for added texture if desired.
Make sure to let the bars cool before cutting for clean slices.
These bars can be stored in an airtight container for up to 3 days.
