- 32 oz. bag tater tots, frozen, not thawed
- 1 lb. ground beef
- 1 small yellow onion, diced
- 1 green bell pepper, diced
- 1 oz. taco seasoning mix
- 2/3 cup water
- 16 oz. sour cream
- 8 oz. sharp cheddar cheese, divided
- 1/8 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. onion powder
- diced tomatoes

Instructions
- Spray a 6-quart oval slow cooker with non-stick spray and add the tater tots in an even layer.
- In a large skillet over medium-high heat, brown the ground beef, onions, and bell pepper. Drain the fat when the meat is browned.
- Add the specified amount of water according to the taco seasoning packet (typically 2/3 cup) to the meat, along with the taco seasoning. Stir and cook until thickened.
- Pour the meat mixture over the tater tots in the slow cooker.
- In a medium bowl, combine the sour cream, salt, pepper, onion powder, and half of the shredded cheese. Mix well.
- Spread the sour cream cheese mixture evenly over the meat in the slow cooker.
- Cover and cook on LOW for 4.5 hours without opening the lid.
- Once cooking time is complete, add the remaining cheese on top of the casserole.
- Cover lightly to let the cheese melt for 5-10 minutes before serving.
- Top with diced tomatoes and enjoy!
Notes
For a spicier version, use spicy taco seasoning or add jalapeños.
Feel free to customize with your favorite veggies or beans for extra flavor.
This casserole can be prepared ahead of time and stored in the refrigerator before cooking.
