Ingredients

  • 1 ½ pounds boneless skinless chicken breasts
  • 1 tablespoon jarred minced garlic
  • 2 teaspoons italian seasoning blend
  • 1 cup chicken stock
  • ½ cup sun-dried tomatoes
  • 2 tablespoons cornstarch or tapioca flour
  • ½ cup heavy cream
  • ¼ cup grated parmesan cheese
  • 2 cups fresh spinach
  • optional ¼ cup chopped fresh basil or parsley for garnish

Instructions

  1. Cut chicken into about 4-ounce pieces and place into the slow cooker with garlic, italian seasoning, chicken stock, and sun-dried tomatoes.
  2. Cover and cook on high for 2-3 hours or on low for 4-6 hours, until the chicken reaches an internal temperature of 165 ℉.
  3. Mix cornstarch with 2 tablespoons of water to create a slurry and add to the slow cooker along with heavy cream, grated parmesan cheese, and spinach.
  4. Allow the ingredients to heat through for an additional 30-45 minutes before serving.
  5. Serve over rice, noodles, mashed potatoes, or as desired.

Notes

Feel free to adjust the herbs to your taste for a personal touch.
For a lower fat option, substitute heavy cream with a lighter cream or milk.
