- 1 ½ pounds boneless skinless chicken breasts
- 1 tablespoon jarred minced garlic
- 2 teaspoons italian seasoning blend
- 1 cup chicken stock
- ½ cup sun-dried tomatoes
- 2 tablespoons cornstarch or tapioca flour
- ½ cup heavy cream
- ¼ cup grated parmesan cheese
- 2 cups fresh spinach
- optional ¼ cup chopped fresh basil or parsley for garnish
Instructions
- Cut chicken into about 4-ounce pieces and place into the slow cooker with garlic, italian seasoning, chicken stock, and sun-dried tomatoes.
- Cover and cook on high for 2-3 hours or on low for 4-6 hours, until the chicken reaches an internal temperature of 165 ℉.
- Mix cornstarch with 2 tablespoons of water to create a slurry and add to the slow cooker along with heavy cream, grated parmesan cheese, and spinach.
- Allow the ingredients to heat through for an additional 30-45 minutes before serving.
- Serve over rice, noodles, mashed potatoes, or as desired.
Notes
Feel free to adjust the herbs to your taste for a personal touch.
For a lower fat option, substitute heavy cream with a lighter cream or milk.
