Ingredients
- 2 packages Boursin (5.3 oz each)
- 1 1/2 cups chopped de-seeded tomatoes
- 1/4 cup packed fresh basil leaves, chopped
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, pressed or very finely minced
- salt and pepper to taste
- balsamic reduction
- crackers or crostini for serving
Instructions
- Let the Boursin packages sit at room temperature for 15-20 minutes to soften.
- In a small mixing bowl, combine the chopped tomatoes, basil, olive oil, balsamic vinegar, garlic, salt, and pepper. Stir well and let the mixture rest for 5 minutes.
- Spread the softened Boursin cheese in an even layer in an 8-9" shallow serving dish or pie pan.
- Spoon the tomato-basil mixture over the Boursin, leaving the juices in the bowl.
- Drizzle balsamic reduction over the top and garnish with extra fresh basil leaves. Serve immediately with crackers or crostini.
Notes
For a more intense flavor, allow the tomato-basil mixture to marinate for a longer period before serving.
This dip is best served fresh but can be prepared ahead of time; just assemble before serving.
Experiment with different types of crackers or bread for serving.
