Ingredients

  • 2 1/2 cups flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup butter, cold & diced
  • 7 tbsp cold water
  • 1 egg + 1 tbsp water for egg wash
  • sugar for sprinkling, optional
  • 2 tbsp water
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 6 cups blackberries
  • 3/4 cup sugar
  • 5 tbsp cornstarch

Instructions

  1. Combine flour, sugar, and salt in a food processor and pulse to blend.
  2. Incorporate cold, diced butter until the mixture resembles coarse crumbs.
  3. Gradually add cold water while pulsing until clumps form.
  4. Transfer the dough to parchment paper, divide, and shape into balls, flattening to form discs without kneading.
  5. Wrap each disc in plastic wrap and refrigerate for 1 hour.
  6. Preheat the oven to 400 degrees when ready to use the crust.
  7. For the filling, combine water, lemon juice, vanilla, and blackberries in a saucepan over medium heat.
  8. Gently mix in sugar and cornstarch, cooking until thickened, then set aside.
  9. Roll out the bottom pie crust to a 12" diameter and place it in a 9" pie plate.
  10. Spoon the blackberry filling into the crust without touching the edges.
  11. Roll out the top crust and place it over the pie, trimming edges as needed and sealing them with fingers or a fork.
  12. Whisk together the egg and water, brushing it on top of the pie.
  13. Optionally sprinkle sugar on top.
  14. Make several slits in the center of the pie for steam to escape.
  15. Bake at 400 degrees for 15 minutes, then lower temperature to 350 degrees for an additional 45-50 minutes until bubbly and golden brown.
  16. Check at 30 minutes; cover if the crust becomes too dark.
  17. Let cool before slicing and serving.

Notes

For a sweeter pie, increase the sugar in the filling to taste.
You can substitute frozen blackberries, but reduce the water slightly as they contain more moisture.
This pie can be served warm or chilled, and it pairs well with vanilla ice cream.
