Ingredients

  • 2 ½ cups diced small/medium apples
  • 2 teaspoons granulated sugar
  • ½ teaspoon cinnamon
  • ½ cup (62g) all-purpose flour
  • ½ cup (100g) packed brown sugar
  • ¼ teaspoon salt
  • 3 tablespoons (42g) unsalted butter, melted
  • 2 large eggs
  • 1 cup (200g) granulated sugar
  • ½ cup (118ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup (245g) sour cream
  • 2 cups (248g) all-purpose flour

Instructions

  1. Preheat the oven to 350°F and line muffin pans with paper baking cups.
  2. Place the diced apples in a medium bowl, add ½ inch of water, and microwave for about 2 minutes until they are slightly translucent but not fully cooked. Drain well and sprinkle with cinnamon and sugar.
  3. Prepare the topping by mixing all topping ingredients in a medium bowl using a fork. Set aside.
  4. In a mixing bowl, combine eggs, sugar, and oil using a hand mixer or wooden spoon until creamy. Then add vanilla, vinegar, baking soda, cinnamon, and salt. Stir in sour cream, followed by the flour, mixing until just combined (batter may be slightly lumpy). Finally, fold in the apples.
  5. Pour batter into muffin cups, filling them about ⅔ full (around ¼ cup each), and sprinkle the crumble topping evenly over them.
  6. Bake for 15-19 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 5 minutes before transferring to a rack to cool completely.
  7. Store in an airtight container for up to 3 days or freeze for up to one month.

Notes

For extra flavor, you can add chopped nuts to the crumb topping.
These muffins are best enjoyed fresh but can be frozen for later use.
Adjust the sweetness by varying the amount of sugar based on apple variety.
