- 1 lb. ground beef
- 16 oz. Velveeta cheese, (the small box)
- 20 oz. Rotel® diced tomatoes with & green chiles, (two 10-oz. cans, undrained)
- 2 tsp. chili powder
- 1/4 tsp. garlic powder
- corn chips
- chopped cilantro, optional
Instructions
- Heat a large skillet over medium-high heat and brown the ground beef until crumbled; drain the fat.
- Transfer the cooked ground beef to the slow cooker and cube the Velveeta cheese, adding it on top.
- Pour the undrained Rotel tomatoes over the cheese and beef, then sprinkle the chili powder and garlic powder on top. Stir until combined.
- Cover the slow cooker and cook on HIGH for 2 hours or until the cheese is melted and the dip is hot.
- To keep the dip warm, set the slow cooker to warm and stir occasionally to prevent sticking.
Notes
For added flavor, top with chopped cilantro just before serving.
This dip is a crowd-pleaser; consider doubling the ingredients for larger gatherings.
Serve with a variety of snacks, such as vegetables or crackers, for dipping.
