- 2 medium zucchini, sliced
- 2 cups panko breadcrumbs

- 1 cup flour
- 3 eggs, beaten

Instructions
- Heat oil in a large skillet.
- Slice zucchini into 1/4" rounds and set aside.
- Whisk together breadcrumbs and salt.
- Place flour on a shallow plate and beat eggs in a shallow bowl.
- Dredge each zucchini round through the flour, dip it into the beaten eggs, and then coat it with the breadcrumb mixture.
- Fry zucchini rounds until golden brown on both sides, repeating until all slices are cooked.
Notes
Ensure oil is hot enough for frying to get crispy results.
Use fresh zucchini for the best flavor and texture.
