This creamy tortellini soup is a delightful combination of flavors. Made with Italian sausage, fresh kale, and hearty beans, it offers an irresistible taste that’s simple to prepare, making it the perfect choice for a comforting meal any night of the week.

  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1 pound ground italian sausage, mild or spicy
  • 1 medium white onion, diced
  • 1 large carrot, diced
  • 5 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1/2 teaspoon crushed red pepper flakes
  • 4 cups chicken stock
  • 1 (15-ounce) can white beans, rinsed and drained
  • 1 teaspoon italian seasoning
  • 1 (15-ounce) can fire-roasted diced tomatoes
  • 1 (9-ounce) package cheese tortellini
  • 3 cups chopped fresh kale
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese, plus extra for serving
  • 3 tablespoons minced fresh basil
  • fine sea salt and freshly-ground black pepper

Instructions

  1. In a large stockpot, heat over medium-high heat and brown the sausage, breaking it up with a spoon. Transfer to a bowl and set aside.
  2. Add the diced onion and carrot to the pot with leftover grease; sauté for 5 minutes. Stir in minced garlic and cook for another 2 minutes. Mix in tomato paste and crushed red pepper flakes, sautéing for 2 minutes more.
  3. Pour in the chicken stock and add the white beans and Italian seasoning. Stir well and bring the mixture to a simmer, cooking until the carrots are tender, about 5 minutes.
  4. Using an immersion blender, purée the soup until smooth.
  5. Stir in the cooked sausage, diced tomatoes, cheese tortellini, kale, heavy cream, Parmesan cheese, and fresh basil. Cook for 3-5 minutes until the tortellini is tender.
  6. Taste and adjust seasoning with salt and pepper as desired, typically about 1 teaspoon of salt and ½ teaspoon of black pepper should suffice.
  7. Serve right away, garnished with additional Parmesan cheese.

Notes

Feel free to use spinach if kale is unavailable.
For added spice, adjust the amount of crushed red pepper flakes to your heat preference.
This soup can be stored in the refrigerator for up to four days.
