- 6 ears corn, husk and silk removed
- 4 tablespoons softened butter
- salt and pepper, to taste
- 1 cup cilantro lime crema
- cilantro, for garnishing
- Tajin, for sprinkling
- crumbled cotija cheese, or queso fresco, for topping
Instructions
- Preheat the oven to 400°F (200°C).
- Place the corn on a large baking sheet. Coat each ear of corn with softened butter and season with salt and pepper to taste.
- Roast the corn in the preheated oven for 20 minutes. For a charred effect, turn the broiler on high for the last 2 minutes, closely monitoring to prevent burning. Rotate the corn until all sides are charred.
- Remove the corn from the oven and generously spread cilantro lime crema over each ear. Garnish with cilantro, Tajin, and crumbled cheese before serving.
Notes
For added spice, consider using chili powder alongside Tajin.
Serve immediately while warm for the best flavor and texture.
Leftover corn can be reheated in the oven or microwave but will be less crisp.
