These Cherry Hand Pies are a delightful treat featuring fresh cherries wrapped in flaky puff pastry. With minimal preparation and mouthwatering flavors, they are perfect for quick desserts or warm snacks that everyone will love.

Ingredients

  • 5 ounces fresh cherries
  • 2 tablespoons brown sugar
  • 1/2 teaspoon almond extract
  • 1 teaspoon lemon juice
  • 2 tablespoons cornstarch
  • 1 sheet of frozen puff pastry (defrosted)
  • 1 large egg yolk
  • 2 teaspoons heavy cream
  • granulated sugar for sprinkling on top

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Pit the cherries, yielding almost 1 cup. In a bowl, mix the cherries with brown sugar, almond extract, lemon juice, and cornstarch. Stir well and set aside.
  3. Flour a countertop, unfold the puff pastry, and lightly roll it out to about 1/2 inch larger on all sides. Cut out 2 circles using a 6-inch round cutter and place them on a parchment-lined baking sheet. Divide the cherry filling evenly on one side of each circle, keeping it about 1/2 inch from the edge.
  4. In a small bowl, beat the egg yolk with heavy cream. Brush this mixture all along the edges of the pastry circles. Fold the dough over the filling and crimp the edges to seal. Cut 3 slits in the top of each pie and sprinkle with granulated sugar.
  5. Bake the pies for 18-21 minutes, or until they are golden and puffy.
  6. Allow the hand pies to cool for 10 minutes before serving. Be cautious of hot filling!

Notes

Ensure the puff pastry is fully defrosted for best results.
Adjust the sweetness of the filling by adding more or less brown sugar based on your taste preference.
These hand pies can be served with ice cream for an extra special dessert.
