- 2 tablespoons honey
- 1 4-inch sprig thyme
- 3 large figs, cut in half
- 1/8 teaspoon vanilla extract
- 12 ounces greek yogurt, plain or vanilla
- 2 tablespoons pistachios, toasted
Instructions
- Heat a medium skillet over medium-low heat and add the honey along with thyme leaves. Cook for about 1 minute.
- Place the fig halves cut-side down into the honey and caramelize for 2-3 minutes.
- Use tongs to flip the figs and sauté for an additional 2 minutes before removing from heat. Stir in the vanilla extract.
- Serve the caramelized figs over Greek yogurt, drizzling with the thyme honey and topping with toasted pistachios.
Notes
Ensure the figs are ripe for the best flavor.
Adjust the amount of honey according to your sweetness preference.
You can substitute other nuts if desired.
