Ingredients

  • 1 4-inch sprig thyme
  • 3 large figs, cut in half
  • 1/8 teaspoon vanilla extract
  • 12 ounces greek yogurt, plain or vanilla
  • 2 tablespoons pistachios, toasted

Instructions

  1. Heat a medium skillet over medium-low heat and add the honey along with thyme leaves. Cook for about 1 minute.
  2. Place the fig halves cut-side down into the honey and caramelize for 2-3 minutes.
  3. Use tongs to flip the figs and sauté for an additional 2 minutes before removing from heat. Stir in the vanilla extract.
  4. Serve the caramelized figs over Greek yogurt, drizzling with the thyme honey and topping with toasted pistachios.
