- 2 cups mixed berries (blueberries, raspberries, blackberries, strawberries), chopped
- ¼ cup granulated sugar plus 1 tbsp for sprinkling
- 1 tablespoon cornstarch
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 sheet store-bought pie dough or homemade, chilled
- 1 egg for egg wash
- Optional: coarse sugar for sprinkling
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a mixing bowl, combine the chopped mixed berries, ¼ cup of granulated sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Mix until well coated.
- Roll out the pie dough on the prepared baking sheet.
- Spoon the berry mixture onto the center of the dough, leaving a border around the edges.
- Fold the edges of the dough over the berries, creating a rustic look.
- Beat the egg and brush it over the dough edges, and sprinkle coarse sugar on top if desired.
- Bake for about 35-40 minutes or until the crust is golden brown and the berries are bubbly.
Notes
Serve warm or at room temperature with a scoop of vanilla ice cream for added sweetness.
For a twist, try adding a sprinkle of cinnamon to the berry mixture before baking.
You can use a variety of berries based on what’s in season.
