Ingredients

  • 2 cups mixed berries (blueberries, raspberries, blackberries, strawberries), chopped
  • ¼ cup granulated sugar plus 1 tbsp for sprinkling
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 sheet store-bought pie dough or homemade, chilled
  • 1 egg for egg wash
  • Optional: coarse sugar for sprinkling

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the chopped mixed berries, ¼ cup of granulated sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Mix until well coated.
  3. Roll out the pie dough on the prepared baking sheet.
  4. Spoon the berry mixture onto the center of the dough, leaving a border around the edges.
  5. Fold the edges of the dough over the berries, creating a rustic look.
  6. Beat the egg and brush it over the dough edges, and sprinkle coarse sugar on top if desired.
  7. Bake for about 35-40 minutes or until the crust is golden brown and the berries are bubbly.

Notes

Serve warm or at room temperature with a scoop of vanilla ice cream for added sweetness.
For a twist, try adding a sprinkle of cinnamon to the berry mixture before baking.
You can use a variety of berries based on what’s in season.
