- 3 apples, peeled & diced
- 2 tbsp sugar
- 1 tsp cinnamon
- 1 tbsp lemon juice
- 1 tbsp butter
- 1–2 tbsp water
- 1 cup powdered sugar
- 1–2 tbsp apple juice
- 1/4 tsp vanilla
- 2 (16 oz) cans pillsbury grands buttermilk biscuits
- 1 cup sugar
- 2 tbsp cinnamon
- 1 cup brown sugar
- 1/2 cup butter, melted
Instructions
- Preheat the oven to 325 degrees. Generously cover the inside of a Bundt pan with non-stick spray.
- Peel, core, and dice the apples. Toss them with sugar, cinnamon, and lemon juice.
- Melt butter in a skillet over medium heat. Add apples and cook for 8-10 minutes, stirring occasionally, until they are tender and the liquid is gone. If apples seem dry, add 1 tbsp of water to help them soften. Cool slightly.
- Place half of the caramelized apples in the bottom of the pan.
- Cut each biscuit into quarters.
- In a gallon Ziplock bag, add sugar and cinnamon, then shake to mix.
- Put half the quartered biscuits into the cinnamon sugar mixture. Shake to coat, then distribute evenly into the prepared pan.
- Place the other half of the caramelized apples on top of the biscuits.
- Coat the remaining quartered biscuits and place them in the pan.
- In a small saucepan over low heat, combine brown sugar and melted butter. Stir until well combined and pour evenly over the biscuits.
- Bake for 30 minutes.
- Remove from the oven and let sit for a few minutes before inverting onto a dinner plate.
- To make the icing, whisk together powdered sugar, apple juice, and vanilla, then drizzle over the slightly cooled monkey bread.
Notes
For best flavor, use a variety of apples such as Granny Smith and Honeycrisp.
Ensure that the biscuits are coated well in the cinnamon sugar for extra flavor.
