Ingredients
Scale
- 1 cup peeled, cored, and chopped apples (½” pieces)
- ⅛ teaspoon ground cinnamon
- 1 tablespoon dark brown sugar
- 1¼ cups all-purpose flour
- ¾ teaspoons baking powder
- ¼ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ½ cup unsalted butter, melted
- ¾ cup dark brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- ¼ teaspoon vanilla extract
- ½ teaspoon cinnamon
- 2 tablespoons milk
Instructions
- In a frying pan over medium heat, combine the prepared apples, brown sugar, and cinnamon. Cook for about 5 minutes until the apples soften, then transfer them to a plate to cool.
- Preheat the oven to 350°F and prepare an 8×8” pan by greasing and parchment-lining it, allowing for overhangs to aid in removal.
- In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk the melted butter, brown sugar, egg, and vanilla until smooth.
- Combine the wet ingredients with the dry ingredients, mixing with a rubber spatula until nearly all flour is incorporated. Gently fold in the cooled apples and their juices.
- Spread the batter evenly in the prepared pan and bake for 18-22 minutes, or until the top is lightly browned. Avoid overbaking!
- Allow to cool completely on a wire rack before icing.
Notes
Ensure apples are chopped into even pieces for consistent cooking.
Use parchment paper to prevent sticking and make for easier cutting later.
Adjust the icing sweetness by varying the amount of powdered sugar.
