  • 1 teaspoon kosher salt
  • 2 ½ cups apple cider, or apple juice
  • 2 large eggs, room temperature
  • ¼ cup (½ stick / 57 g) unsalted butter, melted
  • 2 tablespoons vanilla extract
  • ¼ cup apple cider
  • ½ cup (100 g) granulated sugar
  • 2 teaspoons apple pie spice

Instructions

  1. Preheat the oven to 350°F. Grease a 10 to 12 cup Bundt pan with baking spray or butter and flour.
  2. In a large bowl, whisk the flour, sugar, baking powder, apple pie spice, and salt together.
  3. In another bowl, combine the apple cider, eggs, melted butter, and vanilla, whisking until blended.
  4. Add the wet ingredients to the dry ingredients and mix gently until just combined; the batter will be slightly thin.
  5. Pour the batter into the prepared Bundt pan evenly.
  6. Bake for 50 to 65 minutes, or until a toothpick inserted into the center comes out with moist crumbs but no wet batter. Check at 50 minutes.
  7. Cool the cake in the pan for 10 to 15 minutes, then carefully invert it onto a wire rack.
  8. Brush or drizzle ¼ cup apple cider over the warm cake.
  9. Mix sugar and apple pie spice in a small bowl and sprinkle over the cake while it’s still warm, pressing gently for even coverage.
  10. Let the cake cool completely before slicing.
