- 2–3 lbs. chicken drumsticks (about 8 drumsticks)
- 8 oz. bacon (sliced before cooking)
- 3 carrots (sliced)
- 3 celery ribs (sliced)
- 1 small white onion (diced)
- ½ cup Merlot
- 8 oz. tomato sauce
- 1½ tsp. salt
- 2 cups sliced mushrooms
- 1 tsp. oregano
- ½ tsp. dried thyme
- ½ tsp. garlic powder
Instructions
- Combine all vegetables and seasonings in the slow cooker.
- Heat a large skillet over medium-high. Add the sliced bacon and cook until crisp, then drain on paper towels.
- Remove most of the bacon grease from the pan, leaving about 2 tablespoons.
- Brown the chicken drumsticks on both sides in the skillet.
- Add the cooked bacon to the slow cooker with the Merlot and tomato sauce, stirring to combine.
- Nestle the browned drumsticks into the sauce and vegetables.
- Cook on LOW for 5-6 hours.
Notes
For extra flavor, consider marinating the chicken in Merlot overnight.
Feel free to substitute chicken thighs for drumsticks if preferred.
Serve with a side of crusty bread to soak up the sauce.
