Ingredients

  • 23 lbs. chicken drumsticks (about 8 drumsticks)
  • 8 oz. bacon (sliced before cooking)
  • 3 carrots (sliced)
  • 3 celery ribs (sliced)
  • 1 small white onion (diced)
  • ½ cup Merlot
  • 8 oz. tomato sauce
  • 1½ tsp. salt
  • 2 cups sliced mushrooms
  • 1 tsp. oregano
  • ½ tsp. dried thyme
  • ½ tsp. garlic powder

Instructions

  1. Combine all vegetables and seasonings in the slow cooker.
  2. Heat a large skillet over medium-high. Add the sliced bacon and cook until crisp, then drain on paper towels.
  3. Remove most of the bacon grease from the pan, leaving about 2 tablespoons.
  4. Brown the chicken drumsticks on both sides in the skillet.
  5. Add the cooked bacon to the slow cooker with the Merlot and tomato sauce, stirring to combine.
  6. Nestle the browned drumsticks into the sauce and vegetables.
  7. Cook on LOW for 5-6 hours.

Notes

For extra flavor, consider marinating the chicken in Merlot overnight.
Feel free to substitute chicken thighs for drumsticks if preferred.
Serve with a side of crusty bread to soak up the sauce.
