This French Onion Meatloaf is a delightful blend of ground beef, onions, and Swiss cheese. It’s flavorful and easy to prepare, making it a perfect choice for a quick dinner or a comforting meal.

Ingredients

  • 4 large sweet onions (sliced)
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon brown sugar
  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1 teaspoon Italian seasoning
  • ½ cup whole milk
  • 1 large egg
  • 1 oz. packet Lipton onion soup mix
  • ½ cup red wine
  • 2 tablespoons Worcestershire sauce
  • 68 slices Swiss cheese
  • Fresh thyme (for garnish (optional))

Instructions

  1. Melt butter in a large skillet over medium heat, then add sliced onions, salt, pepper, and brown sugar. Cook for 25-30 minutes until soft and golden. Transfer onions to the slow cooker, and pour red wine and Worcestershire sauce over them.
  2. In a mixing bowl, combine ground beef, breadcrumbs, Italian seasoning, milk, egg, and onion soup mix. Mix well until combined.
  3. Shape the meat mixture into an oval loaf for the slow cooker, maintaining a compact form without being overly tight.
  4. Place the meatloaf on top of the caramelized onions in the slow cooker.
  5. Cover and set the slow cooker to low, cooking for about 5 hours.
  6. After 5 hours, carefully add Swiss cheese slices on top of the meatloaf. Cover again and cook for an additional 10 minutes until cheese melts.
  7. Garnish with fresh thyme and let rest for 5 minutes before slicing to serve. Enjoy with the caramelized onions and sauce.

Notes

For extra flavor, feel free to add minced garlic to the onion mixture while cooking.
If you prefer, the meatloaf can also be baked in the oven at 350°F for about 1 hour instead of using a slow cooker.
Letting the meatloaf rest before slicing helps maintain its shape.
