Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon garlic and herb seasoning
  • 10 oz frozen cut green beans
  • 8 oz carrots (peeled and sliced ½ inch thick)
  • 1 box (6oz chicken-flavored stuffing mix)
  • 4 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups chicken broth
  • ½ cup heavy cream
  • 1 tablespoon powdered chicken bouillon (or one cube)
  • ½ teaspoons salt

Instructions

  1. Add chicken to slow cooker and sprinkle with seasoning blend evenly.
  2. Top with green beans and carrots (or vegetables of choice).
  3. Spread the contents of the stuffing box evenly over the chicken.
  4. Melt butter in a small glass bowl in the microwave and let it cool slightly.
  5. Whisk flour into the melted butter until smooth.
  6. Whisk in the chicken broth, heavy cream, bouillon, and salt until well combined.
  7. Pour the mixture over the ingredients in the slow cooker.
  8. Cover and cook on high for 2-3 hours or low for 4-6 hours until the chicken is cooked through.
  9. If desired, leave the cover off the slow cooker for the last 30 minutes to crisp up the stuffing.

Notes

You can substitute the chicken breasts with thighs for a richer flavor.
Feel free to add your favorite vegetables for extra nutrition.
For added flavor, use homemade chicken broth if available.
